I did a search and found work arounds that unfortunately the examples are no longer available since they are posted back in 2015 or older.
Short part is I'm restricted on length of the field but not the height. I can give the field enough room to be multiline but can't find a way to get the text to wrap. ***for clarification, what is displayed when clicking the dropdown to expose the list can stay single lined and cut off but when a selection is made I would like that definitely be word-wrapped/multiline.

I am sorry If I couldn't understand the problem statement here but Is this question regarding Adobe Experience Manager Sites?.
If you are mentioning about the properties field of a JCR Node, I don't think that you would be able to wrap the value of the filed.
