Is there any good documentation on how the built in site search scores the content for the results? It doesn't seem to be presenting very good results and would like to edit the depth it is scanning as well as have it include the DAM for the /docs folder.

You would need to understand the details of the JCR query engine, especially regarding ranking. Which is definitely not trivial.
