How can a see stale/unused projects containing Service Account (JWT) credentials i my admin console?

Hello, 

You can view that information on the Developer Console and not the Admin Console. 

1. Go to Developer Console - https://developer.adobe.com/console/projects/
2. Apply the filter on the left rail 'Has Service Account (JWT)'
3. See each project's Last service activity date to know which ones contain an unused JWT credential.
