I have tried to change the first name of a colleague multiple times and saved it but it resets to their old name the next day. I thought maybe it had to do with the SSO configuration, but our IT department said they have the name correct on their end. Any ideas why this could be happening?

maybe worth checking with Support. There is a known issue about updating user profile. ALthough I'm not sure if that matched 100% your case:
