Creating a custom form feeding into a custom view

Good morning all, I had an odd question that I do not expect everyone to know the answer to. But I am testing out creating a custom form that will feed into a Custom view for one specific team. They want the project to match their really long Excel sheet. Where there are over 20 phases for any given job and there are about a 50 jobs for this one project. I input all the phases with the option of freeform text. I do not think they really need to have on time, % complete, etc. they want to be able to put the date actually completed free form. Does anyone know how this will impact reporting? My Director will only really focus on hours worked on, not so much on planned completion versus actual completion Attached is the example spreadsheet of what they want to be in WorkFront for their department any help greatly appreciated
