Best Practices for post-project review

Our team is trying to figure out the best way to track the benefits of the project post-completion (i.e. now that the project is complete, were the end-users able to achieve the original goal?) Our current solution is to keep track of these goals by creating an individual task on the related project for each goal. I'd like to create task reminders to follow-up with end-users after the project is complete but it looks I can only set-up task reminders for projects in the Current status. The other issue is these tasks/goals are worked on (in reality) after the project work is complete. We can't update the planned start or end date of the tasks to reflect the actual dates we'll be working on these because then it would extend the project completion date. We still want the project completion date to reflect the project work itself. Does anyone else track project benefits post-completion? If so, are there any other solutions out there to track these? Thanks!
