Does the signature lock the form? If it is a livecycle created form, you have the option of locking the form when signed which will mean it cant be cleared.
Other things to try: If using Acrobat Pro
• Right click signature and click Clear Signature
• In the Tools > Sign and Certify section, click More Sign and Certify > click Clear all signatures.
