How to "define activity" for to import xmp data in pdf file

I need to import xmp metadata for pdf file through watch folder. So i created watchfolder through workbench. I set "input variables" for pdf and xmp file and also i set "output variable" for output pdf file. But i dont know which "Service" and "Operation" is used to "Define activity" in workbench. Could you please explain me the flow and process.

You can use one of the operation under XML Utilities (under Common) to do that.
