Email address being overwritten in Distribute

I am trying to finalise a LiveCycle form with a specific email address in the Submit by Email button (or a button set to 'Submit').



But when I go 'distribute form', using 'Manually collect responses in my email box' and 'save a local copy and manually send later', it always overwrites the email address in the button(s) with the one on the local machine.



Is there something I am doing wrong?

FWIW it would appear that if you have an email address in Acrobat's Preferences/Identity then it overwrites any other email address in Submit by Email button when it distributes a form.
