Does AEP store IP address in the logs

Assuming you referring to OOTB analytics source connector, the "ipv6 will be mapped to environment.ipV6" field in the schema.

Are you referring to any specific log? It's PII information and Adobe's Platform is privacy certified hence it will not store the info in any log files.

Here additional information around IP - While configuring the datastream, you can enable the Geo Location option to City to capture the IP Address. From datastream, if you have added a service to forward to Adobe Analytics, the IP fields will get populated automatically in the field that @anil_umachigi mentioned.
