When uploading .docx files to AEM, some of the files thumbnail, while other do not. Is there a reason for this, or a specific setting that is messing things up?

As Kautuk pointed out there is a way of using the com.day.cq.wcm.foundation.ImageHelper and other APIs to build a custom DAM handler to modify/set thumbnails. If you are using the OOTB functionality - you should get Thumbnails automatically when you upload an asset to the DAM. If you are not getting a thumbnail, are you seeing an error in the AEM log file.
