When I specify "caucasian man in his 50's", it returns images of men with beards over 90% of the time. And yes, this even happens if I add "clean-shaven" or "without facial hair". What do I need to do to get a man without a beard?

Yes - such a frustration. I keep adding the terms that are supposed to corrent this to the point that the last prompt I used in Adobe's generative AI stock was "young without beard, Caucasian man, clean-shaven, without facial hair, moving into first apartment, holding up keys. clean-shaven, clean-shaven, clean-shaven, clean-shaven,"
Every image has a beard, it doesn't matter what I say. The pose and the rest is fine, but I work for an organization serving youth. Half the time when I ask for a woman I get a man with a beard, too!
