A number of folks have been asking how to change the default to classic mode instead of Touch Mode. This is relatively easy, just go to http://localhost/system/console/configMgr and do a search for WCM Mode Authoring UI Service. Open up this config node and the first setting is Default UI Authoring mode. Depending on your needs, you can change this to either TOUCH or CLASSIC. Remember that any cookies stored in a browser will override this setting, which of course also means any preferences that an individual user has set in their settings.
