Definition expansion missing in AA 2.0 API Projects endpoint

The endpoint guides indicate you can use the "definition" expansion in a projects request, but no definition is showing in the response when I try e.g. https://analytics.adobe.io/api/{GLOBAL_COMPANY_ID}/projects?includeType=all&expansion=definition

I can retrieve definitions just fine when looking at individual project ids, but not when requesting all projects even though the documentation seems to indicate I should be able to.

Any thoughts on this one?

That is odd, you are right, the documentation indicates that the description should be returned.. if you haven't already, you could try reaching out to Client Care, maybe they can look deeper into the API calls you are making and try to dig into why that information isn't being returned.
