What is the cause of some users not having edit access to projects?

What is the cause of some users not having edit access to projects? 

 

One user is 'managing' all of this who is currently on leave and the other team aren't able to do it but everyone has the same access level as the person who 'manages' this normally.

Have you checked Sharing? Even though the users have the same access level, the projects need to be shared with them with "manage it" access selected.

Jaxelle, you can click the Share button on the project and assure that the users that need edit are set to edit permissions for the project.  Users will inherit edit permissions for tasks they are assigned to or if the project template provides permissions to users/groups.
