I think you'll find that if you select that column in your view and click on the Advanced Options link, it will provide you with a field format dropdown that you can use to select any of the available date+time combinations. For workflows that are constantly looking at the time, we make this view available to the users instead of whatever they get as standard out-of-box views.

That's a great catch, but it highlights a system function that can be troublesome, and I'd like to know if you have a workaround. Having the due time set by default to the time of day the user happens to be when they set the calendar date often leads to confusion when the duration pushes tasks past the expected date. We can train users to enter the time of day, of course, but it makes the process much more labour-intensive. Is there an option I'm unaware of to have task planned start/completion time default to a set time (say whatever the start/end of the default schedule is) and then allow the end user to override that with a specific time when they need one?
