I am currently in the process of developing a workflow for our request queue, which will require approval each time a request is submitted before it can proceed to the next stage. Is it feasible to establish a default approver for these settings? this would entail the automatic assignment of a designated approver, such as Content Director, before a request can be converted into a project.
Yes, this is possible! You will first need to setup an approval process, this can be done in the queue project itself or under settings (more information here).
If you want the approval process to be applicable for all requests in a queue, you can just add it under Queue Details. If you want it for specific requests in the Queue, you can add it under Queue Topics (similar button).
