How are you documenting / governing global settings?

We have a new division that will be joining our instance. Their workflows are very different from ours. I am looking to begin documenting global settings - settings that if they change will have a ripple effect. It appears WF does not have a list of these 'global level' settings. How have you documented or governed these settings?

For simplicity sake, I screen grabbed the specifics that are global settings, added into a word document, and then converted to PDF so we can comment on.
