Has anyone found a work around to be able to edit a project custom field on a task report? We really need to find a way to do this if it is at all possible.

Only the base object data in a view or report (eg Task on a Task, Project on a Project) can be edited, natively.

Since project has several tasks - i don't see much reason to edit a project field when looking at tasks. More over, if you change that field, don't you have to then adjust it on all the tasks in that same project?
What's the use case here?
If you must, you can use extra fields and Fusion
add a field on the task that will mirror the project field
Scenario 1, set the task field to the value of the project field.
Scenario 2, when that field changes on a task, update the parent project field.

The use case is we have a custom form that is for both Projects and Tasks. One of the fields on this form (Next Steps) is something our team uses to take notes/ provide quick updates on the project. We have a task report that looks at the asset delivery task data, but pulls in a lot of the high level project info. The Next Steps field is something we want to be able to inline edit from this task report because it will be used with our business partners to see when the delivery of this asset task is due, but looking at the overall progress of the project as a whole as well.

Got it. So there is no way around the WF limitation that you can't edit any properties except those on the currently listed row.
So I would look into a separate form/field on the delivery task, that you display next to the project's next steps field.
You can add text inline, and it keeps "project-level" info separate from "task-specific" info. In other words I wouldn't combine them into one field.
