I want to be able to see the date a request was submitted.

I would also like to see the original submission date for the request. We need to know/track when requests are submitted late. Once the issue is converted to a working project the date changes from the original submission date and time from the original person to the converted date and time date it was flipped from issue to project by the Admin or PM. We are not able to prove the original submission was late and why we had to shorten the task timeline.

Per the comment above you can change your view once the project is under way, to show the submitted date. However, this is the date it was changed from an issue to a project and not necessarily the originally date it was submitted.

Seems like the original date could be tracked in the updates when converted just like the task are tracked when a worker or a planner accepts them to work on.
