Adjusting proofing deadlines

Our agency works on a fast paced timeline for our jobs. Sometimes we work in less than 30 minute increments for each group. It would be great if you can have 5 minutes, 10 min, 15 min, 30 min set up instead of a specific time.

Also, noticing that when a deadline is calculated from stage activation, it does not calculate a deadline to begin. You have to manually set this deadline to begin.
Wondering if there is any way around this without having to manually set this at each stage. Should we set these for 1 hour per stage in our templates?

Please advise.
