Ability to Customize Sections when Opening or Editing a Project

The ability to delete sections or customize the fields when starting a project or editing a project. There are some sections we don't use or don't want others to fill out (almost all projects are created by using a template) and want to make it as simple as possible for our new users and make the set up cleaner.
We only want the Overview (and even delete some items on that if possible) and Custom Forms sections. We want to hide the Finance, Settings and Access sections.
