AEM Pages, Rollout Assets from /content/dam is not updating the paths, what can we do to make sure that /content/dam/my-site/${LOCALE} is actually translated after the rollout of a page... when assets are being used?

OOTB Rollout won't trigger translation on its own , you'll have to write a custom rollout to trigger asset translation post-rollout. Like it does for XF's .
