Newbie to reporting - Default segments
These segments are of no use to me. Is there a way to create my own here based on delivery logs (Label, Date sent etc.)?

I don't believe there is a way to customize the reporting based on the logs. There is some ability to customize reporting based on workflow segments and custom profile dimensions, but that does not sound like it would fit your use case.
