I wonder whether it will be working in real-time since when I tried to run an activity targeted to an AAM audience, the personalisation worked with a latency?

This will require ID Synching. If the you have AAM license then you can setup Profile Merge Rules for cross device ID Synch, once that is done you can personalize user experience across devices. Hope this helps.
