I need to understand which all language/script supported by AEM.
Does it support
1) Chinese
2) Korean
3) Vietnamese

Yes AEM provide support for chinese, korean and vietnamese.
Chinese - zh, and other please check in CRXDE
Korean- ko,ko_kr
Vietnamese vi
The available languages supported can be seen in CRX/DE under the path "/libs/wcm/core/resources/languages"
