I'd like to install AEM 6.0 onto JBOSS EAP 7.x.
Is there any documentation and/or samples about it ?

It is similar for 6.0 as well. If you really want 6.0 docs, then download from packageshare - Older versions of Adobe Experience Manager (AEM), CQ & CRX
