Is the metric of 'Unique Devices' an out-of-the-box as I can't see it within my businesses Analytics.
If there is any documentation that could assist with the set-up of this metric it'd be much appreciated.

The ‘Unique devices’ metric is a Cross-device analytics metric that counts the number of unique unidentified devices and unique virtual devices. Unidentified devices are devices that generated anonymous hits. Unique virtual devices are distinct people identified per device. This 'Unique Devices' is not an out-of-the box metrics.
But, the availability for the Cross-device analytics is only available to existing customers that already have a license for the functionality. The functionality is no longer offered as an additional add-on to existing or new customers.

I have never come across an ootb "Unique Devices" metric, so this is presumably a custom dimension someone in your org has created.
Depends a bit on your definition of what constitutes a device.
You could for instance use the Mobile Device Type to answer the general question of which categories visitors use to access your website, but this will count Visitors multiple times if they are coming from different browsers (unless you can identify them through e.g. a customer number if they are logged in).
