Site Catalyst has been implemented and our website offers newsletters to subscribers.

  However, I want to know how many people clicked & opened the email .

Can you tell me which client are you using to send the emails? If your email client supports HTML you could use the way outlined in this article - https://helpx.adobe.com/analytics/kb/sending-image-requests-emails.html
