PLP Page views
Hello,
Does anyone know the best way to build a segment, where I can compare users who visit 2 pages of PLP products vs. 1 page?

Do you have an event tracking your product pages specifically? Or can you easily identify those pages in your site?
You could try some segments like:
2+ Product Pages in Visit:
VISIT
Page Type equals Product Page
THEN
Page Type equals Product Page
Only 1 Product Pages in Visit:
VISIT
Page Type equals Product Page
AND
[VISIT Container - exclude]
Page Type equals Product Page
THEN
Page Type equals Product Page
[End of Container]
Essentially, look for Visits that have a Product Page followed by another Product Page within the Visit, and look at Visits that have a Product Page view but also exclude Visits that have 2 or more Product Pages in the visit.
