is there a way to Get Weekly Unique Visitor count on adobe analytics dashboard for every week over a large timeframe, without having to manually create a new date range for every week?

For this, add Week dimension and Unique Visitors metric to the table and your long date range should be freeform table date range.. If you want this for any specific page, breakdown the page by Week dimension.
