Does anyone know if we are tracking in adobe analytics how users interact with the Chrome extension?

In each page if users use a Chrome extension to translate a page

Simply no, as it happens on the browser level how to display web content. Think about the zoom level which is something you will not know and are unable to control.

The link is referring to a different use case, which is the Chrome extension developer implementing Adobe Analytics to measure how is the extension being used, such as Google added the Adobe Analytics  to the translation extension. The extension developer has control to the extension source code and the measurement is on the extension usage across all websites visited by all users of that particular extension.

But your case is as the website owner to know if your website visitor using a browser extension, which you cannot tell.
