Stop sending mails started in Adobe Campaign Standard

Is it possible in ACS to stop sending deliveries to the customers of an audience once the deliveries have been started, modify the campaign and relaunch it, so as to avoid having to send another apology deliveries because the error?

No, this is not possible. Moreover I think the content is locked after you confirm the message and it starts delivery.
