A value in drop down should NOT be displayed in Edit mode in input form

In Input form, how can we restrict users from selecting a certain value in the drop down. For example, I have a drop down field Status that has values Active, Archive or In-Progress. However, users should ONLY  be allowed to see Archive, not select it when in edit mode.
