Can anyone provide guidance/instructions on how to set up a "select all" feature in Asset Share Commons? My organization would like to give users the ability to quickly add a large quantity of assets to their shopping carts without clicking each asset one-by-one.

Unfortunately, there is no such functionality in the ASC project, so you will have to extend the functionality to add such behavior. If you are a developer, you could use the "Download Cart" functionality as a reference. Additionally, you could suggest this idea in the GitHub repository for further development: https://github.com/adobe/asset-share-commons/pulls
