After publishing the page the new version is getting created in time line.
Can anyone please help me with how/why it's getting created and the reason behind that.

This is the default behaviour/step after the replication using quick publish, the version is created.

A version created after publishing a page acts like a snapshot, so that you refer what was to be served to end-users.
Any authoring activity done on top of published version can easily be compared.
If you are using "Publish content tree workflow", it has an option to enable/disable version creation https://experienceleague.adobe.com/docs/experience-manager-cloud-service/content/operations/replicat...
But, if you want to change the default behaviour using Quick/Manage publish as well, then please raise a support ticket. If they can help !
