Is there any training available on using these yet? I know that they are still Beta.  I have just spent an hour in utter confusion... : )  How about one of those AMAZING training videos Colin!

It's still beta, so there isn't a full set of resources.

Colin won't shoot a video until Layout Templates is no longer beta. That's just how he rolls.

Grant, I would definitely recommend the help article linked to above. Helped me understand the new feature in 5 minutes.
