Universal Editor, is to help you in faster/in-context editing of your content. How you re-purpose your content for multi-channel depends on how you model the content and expose it. Limitation in my experience, in using Universal editor in a headless implementation has been the learning curve for FE engineers and if you have multiple distributed FE teams without prior understanding of AEM, it could become difficult and might slow down the development initially. So, it really depends on your organisation set up and priorities.
