I have a question regarding Sales Insight installation.  We would like to test MSI in one of our SFDC Sandboxes. 

My question is, can I install MSI in my SFDC sandbox and configure it to my production instance of Marketo.  When I've finished my MSI testing, can I then uninstall it from my SFDC sandbox, install MSI in my production instance of SFDC and configure that to my production instance of Marketo?

You'd have to check the docs, but you should be able to do this as long as you do this in the SFDC Sandbox and the attached Marketo sandbox...which is what you said.
