Is there a way to change "unsubscribe" tracking to a more advanced option? For example, giving the prospect the opportunity to choose less emails, one email per week, etc.

Yes.

This requires some advanced planning and consideration of use of Communications Limits or to use various smart lists or filters.

You will then have to ensure that email sends restrict by frequency counter or something. There are several threads on Subscription Management. And here:

When I first tried this, I wanted to restrict emails to 2 promos/mo, so I had to properly name emails and then say

Not Was Sent Email CONTAINS "Promo" in Past 30 days to include people.
