hi, is there a possibility to use munchkin for tracking videos also for YouPHPTube  ?

what we want to see is has started and finished the videos...?

I find their near-copyright infringement to be kind of offputting (and I'm 100% sure they don't have the rights to rip that Ed Sheeran video).

But... the technical question is going to be whether they expose the video player API to you in a user-accessible fashion.  Since they seem to use VideoJS as their underlying player, the answer is yes, unless they do something that messes with it.
