Token available to reference an opportunity created in Salesforce?

Hello,

I would like to use a token to reference the last time an opportunity was opened for a particular customer(s) in Salesforce.
It would read something like:

Jane, I see the last time we did business togther was {{token here}} ...

Where the token pulls the date from the last opportunity Jane was associated with in Salesforce.

Is this possible?
