Streams v Programs

In regards to engagement programs, what is the best practice for the different streams? Is it best to have early - mid - late streams (etc) in one program? Or is there some reason it would be better to have them as different programs?

Also, at the end of the last stream, what is a good practice? Do they automatically get removed from the flow?

If you have multiple streams enabled in your instance, you should use streams when a lead can only be receiving content from one stream at a time.  You would use multiple programs if you want the lead to be nurtured in more than one.  Hope this helps!
