Set a date for an email to go out in nurturing/ engagement program

Could someone tell me how to set a particular date for an email to go out in a nurturing/ engagement program please?

In the 'cadence' i can only see how to send an email at a regular interval (e.g. every 2nd Tue or 4th Wed etc.). We have a series of emails which need to go to different audiences on certain dates, which seems like a more basic piece of functionality than how the cadence  works. Surely this can be done?

To send on a specific date, you will need to use programs inside the stream.  The program flow will include the wait step that will specify the actual day of the week for the send.  You will have to set the cadence of the stream to the lowest common date denominator (e.g. daily) and then let hte wait step calculate from there.  The intent of the cadence was to specify an ongoing cadence, not an actual date.
