Roadshow iPad App Input Fields

I can't seem to find the option to change the input fields for the roadshow iPad app. It only asks for the same few quetions and since we use custom fields, none of that information will work for us.

There are also fields that we need to have when collecting data and those are not there. 

Does anyone know of a way of changing those fields??
