Managing Implied Opt-In

So I am creating a smart campaign to update the date fields for implied opt-in for CASL. Looks like this right now:

Smart List - filled out form (have certain forms selected) in past 6 months
Flow - update opt-in field to TRUE and update opt-in date field to ____

The last part is where I am getting stuck. I need the date field to be the date the most recent form was completed as long as it was not the unsubscribe form. So how would this work?

You can't really do that retroactively. You can do it from here forward, but unless that date lives in a field, like you've been capturing a "Last Interesting Moment", then it is pretty hard to do.

What I've done is drawn a line in the sand & said, it will be correct from this date forward, submissions prior to that require you to look at the activity log to find the specific date.
