Anyone know a way to create a list of leads that would give me the last email they were sent & if they opened/clicked?

Hey Joe,

Without custom fields and/or interesting moments, you can't pull the list you are looking for. Marketo's default is to just store that information in the Activity Log. You could create a custom field for "Last Email Sent", "Opened Last Email Sent", and "Clicked Last Email Sent" which would be monitored with trigger campaigns.
