To optimize our Google ad campaigns, Google suggested we create a thank you landing page once someone submits a Marketo contact form on our site, that will display all of the info that was submitted.

Is it possible to do this by creating a Marketo landing page and using tokens?

No, you cannot use tokens for this because they aren’t guaranteed to be available on the pageview directly after a form fillout. (More precisely: the Munchkin cookie isn’t guaranteed to be associated on the next pageview.)
