Insert variable in email?

I'd like to include a variable (a different URL for each lead) within a Marketo email - is this doable? If yes, how?

You could do this with a custom field:

Custom URL (String)

then populate that field

then in the email, use

{{lead.Custom URL}} wherever the URL should appear, including in links.

But if you are thinking of PURLs, please look up th PURL documentation...as that is quite different.

If you do go the PURL route, just be aware of some of the inconsistent behaviors:
