How do we utilize multiple subscription options?

We would like to be able to have a contact subscribe/unsubscribe with multiple options
- Product news/updates (release intervals)
- Newsletter (monthly)
- Product "A" only
- Prodeuc "B" only
- Unsubscribe all

I haven't seen this done yet and I was wondering how others are accomplishing htis. 

Also, we are NOT using SFDC
